Very simple and delicious dish. You can taste the difference when you get really good pork!
(Pork cooked by Naomi, sauce by me)
Cook port belly in water with ginger, sichuan-pepper and star-anise.
Reduce soysauce by simmering, add sugar and let cold. Chop a bulb of
garlic and mix into the sauce. Slice the pork, arrange, and pour sauce.
3am in the morning, coming back from a friend's birthday kareoke do in london, I am slurping soup on the stove like a hungry cat.
Some people said that my cooking has been very different from before. One of the thing is that when I stayed with norman and christina, I noticed chrinstina would put everything leftover into a pot to make the soup base for the next day, which is a brilliant idea. Where else can the garlic skin and leak leftover go?
And of course once you have a serious soup base your cooking can only be serious!
At the moment I am slurping soup made from the leftover of the hackerkitchen this wednesday. nausica88 wrote a review about it, and i was thrilled and felt really flattered. *blush*
So the soup was made of the bones from lamb (I bought a whole leg), tuna and mackerel that weren't as good the next day, and all the rest. I also made some more lamb dishes this afternoon with this soup base.
